By Sunday night, more than 25,000 will have walked off shelves but another 10,000 will be sold on Monday before Bakers Delight at Belconnen stops making, baking and selling the Easter favourite.
For owner and baker Chris Smith, 44, and his team of six it is the busiest time of year.
''We started baking for Thursday at 10pm on Wednesday night,'' Mr Smith said.
''And we baked through the day until 5pm so people can get them steaming hot from the oven or packaged up.''
Mr Smith has been a baker for 17 years and says the appetite for hot cross buns is growing.
''It's been a good year this year - a very solid year this year - Easter's not in school holidays.''
Across Australia, Bakers Delight bakers sold more than 2.5 million buns on Thursday, using 850 tonnes of flour, 280 tonnes of sultanas, 200 tonnes of currants and 180 tonnes of chocolate chips.
Mr Smith says the traditional buns are still his favourite, although he sell fruitless, chocolate and Mocha varieties.
''They're best fresh out of the oven with lots of butter.''
