Prosecutors on Friday sought more time to give the victim and his wife the chance to prepare a victim impact statement in the sentencing of Soo Hong Kim.
The Korean national has pleaded guilty to negligent driving occasioning grievous bodily harm and failing to give way.
Kim hit the Harley-Davidson rider when he failed to give way at the intersection of Majura Road and the Federal Highway about 11am on January 2.
The rider's right leg was crushed, causing multiple fractures to his foot and leg and artery damage.
He underwent surgery at The Canberra Hospital, and his condition stabilised.
But prosecutor Amanda Clarke on Friday told the ACT Magistrates Court his left leg had since been amputated.
Magistrate Peter Dingwall is due to sentence Kim later this month. The negligent driving charge has a maximum penalty of one year's jail.
The injured man's family have indicated an interest in preparing a victim impact statement, but Ms Clarke said he was still recuperating in hospital.
But Kim's lawyer said her client was very keen to get the case finalised and had written a letter of apology to the victim and his family.
The lawyer said Kim wanted to return to Korea to care for his ill mother.
