Police say a truck was driving north on the Hume Highway near Jugiong on Tuesday, when it collided with the back of the Toyota Coaster just after midnight.
Both vehicles are thought to have been moving north at the time of the crash.
The impact caused the young woman critical head and internal injuries.
The young woman, 26, was the only one to be injured in the crash. She was rushed to Canberra Hospital, but succumbed to her injuries on Saturday night.
NSW Police are investigating the circumstances surrounding the collision.
Two other young men in the van, both aged 24, were uninjured, as was the truck driver.
Police have not released the identity of the Canadian woman at this stage.
