Luke Anthony Penders, 27, pleaded guilty in the ACT Magistrates Court on Monday to property damage.
Court documents show police manning CCTV cameras spotted Penders spraying graffiti on Gelato Joe's about 12.15am on August 9.
A police patrol, who stopped him on Bunda Street shortly afterwards, noticed the Bonython man had paint on his fingers and palms.
A search of his backpack uncovered six spray paint cans, with cans labelled Reload Chrome and Reload Black near empty.
Police cross-checked the colours against wet paint on the walls of Gelato Joe's and discovered it matched.
Penders was arrested and charged with property damage and summonsed to appear before court on Monday.
Special Magistrate Maria Doogan fined the defendant $400 and told him as an artist he should know better.
Penders told the court he would never offend again.
