Capital Brewing Co has teamed up with Majura Park's Three Mills Bakery to brew a seasonal small-batch beer flavoured with real cherry pie.
The festive brew was the idea of head brewer Wade Hurley, who wanted a "little taste of home" from his native United States for Christmas.
Mr Hurley approached Three Mills' head baker Justin King and ordered 'cherry pies' to add to the brew.
"Justin asked me if I was talking about a cherry tart and I was like, 'what's a cherry tart'?" he said.
"So first I had to tell them what a cherry pie was."
Capital Brewing co-owner Laurence Kain said, "we just wanted to make a cool Christmas beer and we'd never seen anyone throw whole pies into a mash tun before, so we were like, 'let's do it'".
While he's more used to baking bread, Mr King whipped up seven cherry tarts, which were thrown directly into the early stages of the brew on Friday at the Capital brewery in Fyshwick.
The resulting beer will be the cherry pie porter, an easy-drinking beer with chocolate flavours.
"You'll get a little bit of flavour from the pies and also some of the sugars will ferment out. It's more just for fun but hopefully you'll get some of that cherry flavour. We're also going to put cherries in the beer after it's done fermenting where you'll get a lot of cherry flavour as well," Mr Hurley said.
"I think the cherries will shine and the acidity of the cherries will cut through some of that sweetness to balance it out."
The cherry pie porter will be ready in about 15 days, with only a limited quantity being brewed, and it will only be available from the Capital Taproom in Fyshwick.
As well as being a treat for consumers, the Capital team wants the beers to do even more good, and $1 from the sale of each glass of the beer will be donated to children's charities ahead of Christmas.
The Capital Brewing taproom will also have a giant Christmas tree where you can donate gifts for children in need.
