They're currently looking for volunteer bakers to bake up 54 cakes featuring Australia's "big" attractions.

Cake options include everything from the Big Banana in Coffs Harbour, and the Big Pineapple at the Sunshine Coast, to the Big Prawn in Ballina and the big Golden Guitar in Tamworth.

To add a bit of a local flavour, they've added the "Big Cotter Dam" to the list of cakes, or you could also opt for the Big Merino just up the highway in Goulburn.

If you have your heart set on one in particular you will need to get in quick - only one baker is allowed per cake, and cakes will be available to select on a first come first served basis.

The full list of all 54 cakes will be released and available for selection at 10am on Wednesday March 14 at pandsi.org/cake-off.html, and the event is open to both professionals and not so professionals.

All of the cakes will go on display to the public at the Hyatt Hotel on Sunday May 6 from 2pm, and sold via live and silent auctions.

All money raised goes to PANDSI, which supports families affected by perinatal depression and anxiety, and the cakes that raise the most money will be put into a calendar.

The PANDSI cake-off started in 2016, with all 107 cakes from the Australian Women's Weekly Children's Birthday Cakes cookbook baked and displayed in one room, and crowds of around 1500 streamed through Hyatt Hotel Canberra to catch a glimpse. In 2017, the event focussed on Canberra-themed cakes.
