ACT Policing said officers found the 23-year-old unconscious in the car park of McDonald's in Erindale, after responding to reports of a large brawl about 1am.
The man had serious head injuries and was taken to the Canberra Hospital, where he remains in a critical but stable condition.
It is still not clear what started the fight, nor is the exact nature of the man's injuries.
There is no CCTV camera at the back of McDonald's, police say, but a number of witnesses have spoken to police.
Police also can't say whether alcohol played a part in the brawl.
''There were a number of witnesses at the scene, they've been spoken to by police, those who were still there when we arrived,'' Acting Superintendent Greg O'Ryan said.
''We're just asking for any other witnesses who may have seen that to come forward,'' he said.
Police are also hoping that witnesses may have recorded the violence on their mobile phones.
They are urging anyone with vision to contact Crime Stoppers.
No one had been charged over the incident as of about 11.15am, and the investigation is continuing.
Police say a number of witnesses may have left the car park before officers arrived.
