Monaro Highway Patrol seized the man's 1100cc Honda and suspended his licence on the spot about 2.40pm on Saturday after he was detected travelling at 180km/h.
Several thousand motor cycle riders are in the alpine area over the weekend for the annual Snowy Ride.
A police spokesman said the man's behaviour placed his life and other road users in danger.
"Police are reminding all motorists in the Snowy Mountains area that police and speed cameras are out in force this weekend," he said.
"With heavy rain predicted everyone needs to be driving and riding to the prevailing conditions."
