That phone call has landed Graham and trainer Vicki Louis Rasmussen before a Brisbane District Court jury for allegedly fixing the race.

They've both pleaded not guilty to match fixing charges over Race 2 at the Brisbane track on July 28, 2017.

Dapper beat Rasmussen's second-placed January, driven by Leonard Cain, with pre-race favourite Western Jewell in fourth.

"Mr Graham, in collaboration with Mr Cain, made an arrangement that favoured Dapper to win the race over January and over the pre-race favourite Western Jewell," crown prosecutor Noel Needham told the jury.

The Crown alleges Graham was caught in covertly recorded phone calls planning the fix with Rasmussen.

Dapper was to come from the outside and January, on the inside, would facilitate Graham taking the lead, the court heard.

"That's what happened during the course of the race," Mr Needham said.

He had also encouraged a man, who would later identify himself as Peter Poulsen, the owner of January, to bet on Dapper.

After the race, Graham allegedly made congratulatory calls to Mr Poulsen and Rasmussen, who discussed how "they can use the money", the court heard.

Paul Zimmerman, a steward, knew Graham as a successful driver through his own involvement with horse racing.

He said the nature of any particular race was uncertain.

"Favourites win and favourites get beat," he said.

Mr Zimmerman told the court it wasn't uncommon for Graham to drive in multiple races on the same day, including for Graham's father.

He was questioned at length by Graham's barrister, Michael Copley QC, about the rules around whipping, and asked to count how many times the horses in the July 28 race were whipped.

No horse responded in the same way, Mr Zimmerman said.

Rasmussen also pleaded not guilty to match fixing at the start of the trial on Monday.
