Demochi Donuts are making their first interstate foray out of Sydney for the markets, one of six new stallholders for the 2020 event, to be held from February 28 to March 9 at Reconciliation Place.
Dennis Chan of Demochi is excited about coming to the markets.
"I know Canberra loves its food and I'm hoping this product is something quite unique that people will love," Chan said.
He says a mochi is a traditional Japanese dessert mainly eaten during new year celebrations.
"It's a celebration dish made out of glutinous rice flour which makes it very stretchy but also pillowy soft.
"Think of a cross between fairy floss and chewing gum, if you combine those two together you get this pillowy chew.
"We put that in our doughnut recipe, switched out some of the traditional flour and put in rice flour and created this product which is crispy on the outside but you get this pillowy chew in the middle."
Other new stallholders include Canberra's own Superbao who are doing their Sichuan fried chicken bao-ger, a 24-hour cooked chicken thigh, marinated in sticky sauce, infused with Sichuan peppercorn and chilli oil and served with mixed leaves, dressed with signature Sichuan peppercorn mayo.
Also keep an eye out for Grill & Spice, doing Indian street food; vegan duck pancakes from The Pham Sisters; dumplings from Chinese Dim Sum King and Gyoza dumplings from Raijin Noodles & Dumplings.
Other Canberra-based stallholders include Korbq with their chicken waffle and Donburi Station's fusion tacos. Crowd favourites Hoy Pinoy, Flying Noodles, Twistto and Poklol x Puffle are also back.
Chan said it was great to be able to offer another sweet option alongside Gelato Messina and Waffleland.
"There's always room for something sweet and we're glad we can offer this unique product in Canberra."
