The 35-year-old man, who cannot be named for legal reasons, previously pleaded not guilty to one count of sexual intercourse without consent, and one act of indecency without consent.
But on Tuesday, the ACT Magistrates Court heard the pub owner had been slapped with another two of the same charges. His defence lawyer, Peter Woodhouse, said he expected more to come.
Police documents previously tendered to the court said the 35-year-old and his then-partner went out to celebrate New Year's Eve in 2010. In the early hours of the next morning, the woman was "heavily unconscious" on a bed when the pub owner allegedly picked up the family camera and filmed himself raping her.
The alleged assault wasn't discovered until May 2020, when the woman's mother was reviewing the camera's memory card and found 28 images and three videos of the alleged 25-minute assault.
The court documents said police, in June this year, raided the 35-year-old's pub as well as his house, where they found 291 images and videos on a USB drive.
"The images and videos [show] at least four separate occasions of the defendant manipulating and penetrating [the woman's] body while asleep or unconscious," the court documents said.

The pub owner didn't front court from the Alexander Maconochie Centre on Tuesday, but Mr Woodhouse said there was a significant amount of "forensic material" in the case that needed to be analysed.
He said more charges would likely follow the analysis, and asked that the case be adjourned for several months.
Magistrate Bernadette Boss refused the pub owner bail in mid-June, saying police allegations alluded to him having "a history of domestic violence and controlling behaviours" while in a relationship with the alleged victim.
On Tuesday, Dr Boss adjourned the matter to December 1.
