The delivery driver had been conducting customer deliveries in the Narrabundah and Griffith areas when the incident occurred around 12.30am.
Police said the victim had been delivering food "when they noticed the van start to move".
"The victim ran back to the van and opened the door where a man seated in the driver's seat produced a knife before driving away," police said in a statement.
The stolen van is described as a white Toyota HiAce bearing NSW registration CX68ZR.
These delivery drivers usually operate between midnight and 7am.
Companies like Marley Spoon and Hello Fresh are subscription-type services, which deliver the products and pre-selected recipes from which a meal can be prepared.
Hundreds of boxes are delivered around Canberra and the region region every week, usually in the early hours of the morning.
A Melbourne-based company called Home Delivery Services is contracted by Marley Spoon to provide the door-to-door delivery.
Marley Spoon started in Germany in August 2014 and expanded to Australia a little over a year later. It is a publicly listed company in Australia and has now spun off a second brand, Dinnerly, for cost-conscious consumers.
There has been a significant rise in demand for these home-delivered food services since the COVID-19 pandemic began last year.
Police were in Narrabundah on Monday morning, with officers conducting interviews and attempting to find out more information.
The driver was not injured during the carjacking.
