Police say the man had confronted the teenager at suburban Bull Creek on Sunday over the ownership of the bike.
He was stabbed in the abdomen during the incident, and the boy fled the scene.
The man was taken to Royal Perth Hospital but died from his injuries.
Homicide detectives have called for anyone with information or dashcam footage of the incident to come forward.
The teenager is scheduled to appear in Perth Children's Court on Tuesday.
A gofundme page set up to support the dead man's family identified him as father-of-two Petr Levkovskiy.
Organiser Anastassiya Onanchenko said the money collected would go to fund his funeral and provide other assistance.
"We will always remember Petr as a kind, wonderful friend, colleague, husband and father," she said.
"His warm spirit and generosity was joy to all who knew him."
By Tuesday morning the campaign had raised more than $66,000.
