Jeremy William Schwalm is accused of stealing a safe and tills containing more than $2000 from the Sugar Station stall at Westfield Belconnen in May.
He has yet to enter pleas to several charges of burglary and theft.
Mr Schwalm was denied bail for the second time since the incident when he appeared in the ACT Magistrates Court on Friday.
Prosecutors opposed the bail application on the grounds he was unlikely to appear back at court, was likely to reoffend and could interfere with witnesses.
Magistrate Peter Morrison noted the accused had a serious drug addiction and a history of drug offences.
"It's a criminal history, which is impressive for all the wrong reasons, isn't it?" Magistrate Morrison said.
Mr Schwalm had failed to appear at court 11 times for past offences, mostly in the early 2000s, the court heard.
His defence lawyer said his client had only failed to face court once since 2009.
He said Mr Schwalm could live with his father, wouldn't speak with his sister and could report daily to police.
He said Mr Schwalm had been placed on a prison methadone program for his drug addiction and was receiving counselling for mental health problems.
Magistrate Morrison said Mr Schwalm had been put on drug treatment programs in the past but they had not been effective.
He said Mr Schwalm's failure to deal with his drug addiction raised concerns over the likelihood he would appear in court and comply with any bail conditions.
He was remanded in custody and will next appear at court on June 26.
