People visiting the Dickson restaurant's Facebook page have come out in support, but some affected diners are unconvinced.
Briana Jolly and her boyfriend became ill after eating at The Copa on May 11.
She said she did not accept the apology. ''I don't think any words can make up for what they did,'' she said. ''I don't think they should be open, to be honest.''
The Kambah resident has taken two weeks' unpaid leave from her job, missed a university exam, spent an estimated $250 on medical appointments and medication, and continues to suffer joint problems. ''I'm fine [now], it's just my joints are sore, my knees and back are swollen.''
Ms Jolly spent four days in hospital, and is seeking compensation through Slater & Gordon. She lost four kilograms after not eating for five days, while her boyfriend battled on at home and lost eight kilograms.
Hasin Hussain welcomed The Copa's apology, which came about 11 days after diners began suffering from salmonella-contaminated mayonnaise.
''Two weeks later - better than nothing,'' he said.
''It doesn't seem too manufactured by their solicitors.'' Mr Hussain missed six days of work and lost $500 in airfares after he encouraged four friends to join him at the newly opened Brazilian churrasco diner late on May 11.
The Copa's apology - uploaded to its Facebook page - had received 85 ''likes'' by Friday night, with all but one of the six people commenting supporting the restaurant. One person said they welcomed the positive statement after ''so many negative comments from the public'', while another thanked the restaurant for its acknowledgment of the work of hospital staff after 140 people fell ill.
The restaurant's statement said it had removed from its menu all products containing raw eggs.
The restaurant reopened a week ago, with ACT Health saying it would continue monitoring.
