Sharlene Marie Martin, 30, is accused of repeatedly punching the 32-year-old man and biting his ear off outside a home in Harrison, shortly after saying "I f---ing told you I'd get you".
The court heard the lower part of the man's ear lobe was torn off, and had not been re-attached or put on ice two hours after the alleged attack.
Martin allegedly attacked the man while he was holding back another man during a fight at the party.
She allegedly admitted to biting the man's ear off when police first arrived on scene, but later denied it during formal police interview.
During that police interview, she allegedly said she hated the victim, saying "he's a c--- smoker and I hate him".
The prosecution opposed bail, saying Martin was at risk of interfering with the victim and the witnesses, one of whom was her best friend.
Most of those witnesses have not yet been interviewed because they were still intoxicated at the time.
Prosecutors argued she was at risk of reoffending, that she had admitted to having anger management problems, and that she blacked out when using alcohol and drugs.
Chief Magistrate Lorraine Walker refused Martin bail, saying the prosecution's case was strong.
Martin's mother was in court supporting her daughter, and left the court room weeping after bail was refused.
She was remanded in custody until March 18.
