Cameron Owen Sharp, 21, used his hand to imitate the shape of a gun before pointing it at the officer and firing a fake shot, a court has heard.
At the time, Sharp, of Dunlop, had been in the ACT Magistrates Court to be charged with aggravated burglary over a Watson home invasion.
He has pleaded not guilty to that charge.
The ACT Supreme Court heard the former associate of the Comanchero bikie gang was expected to be charged with threatening or intimidating a witness in a judicial proceedings over Tuesday's incident.
Sharp's bail was revoked when he pleaded guilty to unrelated to charges of unlawful confinement and making a demand accompanied by a threat before Justice John Burns on Wednesday.
The court heard about the fresh allegations during the prosecutions application to revoke Sharp's bail.
Justice Burns remanded Sharp in custody as he had been satisfied of a likelihood the offender could harrass or threaten the safety or welfare of witnesses.
Court documents said Sharp and associates had become involved in a dispute over missing drugs.
The victim had been driven to a Canberra house where Sharp had punched him in the head.
The man was strapped to a chair using duct tape and Sharp and his co-offenders, including Barry Avery, 36, and Kyle Musolino, 19, then interrogated the victim about the whereabouts of drugs and cash.
Sharp repeatedly punched the man in the face and head while saying: "Where’s my s***? I know you c**** have got it, I'm sick of hearing I don’t know."
"You are going to pay for the s***."
The victim was also punched by other members of the "gang" over a sustained period, before Sharp lifted the man off the ground by placing a baseball bat into his throat and pushing.
Avery then pierced the victims neck with scissors, before members of the group repeatedly water-boarded the victim while a towel was wrapped under his jaw.
The victim was told he had to sign over his car to them to pay the debt and taken home.
Sharp warned him he would hurt his family if he reported the incident to police.
Sharp will be sentenced on the Supreme Court matters in July.
