Cyclone Winston with its 325km/h winds was the strongest tropical cyclone to ever make landfall on the Pacific nation, killing more than 40 people.
Mr Bullock, his wife Rachel, three-year-old daughter Amelia and 10-month-old son Samuel were in the middle of their holiday when the storm hit.
"On Saturday morning you could see all the luxury yachts had gone down this side creek river and were being tied up to mangroves, so we knew something serious was on the way," Mr Bullock said.
The Curtin family stocked up on supplies at the supermarket, while hotel staff dismantled shacks to protect them from the storm.
In the afternoon, some six hours before the eye passed, Mr Bullock ventured onto the balcony to film some of the wind, the speed of it nearly ripping the phone out of his hand.
The bomb-like sounds of the storm put the Curtin couple in "survival mode".
"At about eight o'clock that night ... things were just getting too wild, the energy, the glass moving and blinds through the sliding doors, which were meant to be sealed, moving."
Mrs Bullock slept in the galley kitchen with Amelia, while Samuel was in his cot under the breakfast bench, Mr Bullock on a mattress next to him.
"One of the key things we learnt from that experience is being parents, young parents, you hit survival mode for your kids. It's all about making sure your kids are OK first and foremost," Mr Bullock said.
The next morning they woke to debris scattered across the Hilton resort.
"You could see palm trees stripped, palm trees snapped in half, leaves ripped off and there was a lot of superficial damage. There wasn't actual structural damage, the villas were all standing.
"They prepared quite well so the shacks where you get your towels from for the pool were all taken apart, and different sort of structures were pulled down in preparation for the storm, to minimise damage."
Mr Bullock praised the hotel staff who worked constantly to clean up, and kept his family informed before the cyclone hit.
Speaking to staff, Mr Bullock said many told him they didn't know what had happened to their families, or whether they had survived.
He said he felt lucky his family had survived unscathed when hearing news of the storm's impact.
"We felt terrible to be sitting at a resort Monday, swimming in the pools and having a few drinks and a nice meal and knowing that outside ... there was all the devastation and countless lives lost."
