Oysters are notoriously hard to open, but third generation farmer Jade Ralston from Batemans Bay has a few tips to help you safely enjoy them this summer.
1. Make sure you're wearing a protective glove or a tea towel around your hand to protect it should your knife slip.
2. Find the frill in the side of the oyster. I generally come in about halfway down where the muscle is so that you're slicing the muscle straight away.
3. Using a bit of force with your shoulder, wriggle the knife inside the shell just enough to leverage it upwards.
4. Slide your knife around the shell while cutting the top muscle and leveraging the shell open.
5. Flick away the top shell and place the oyster down so you've got a base to work with.
6. Slide the knife along the shell cutting the bottom muscle.
7. Pull the oyster out of the shell, flip it over, and place it back inside the shell for presentation.
