Once upon a time there were two ways to get hold of coriander leaves in Australia. The first was to buy a bunch of coriander; the second was to plant coriander seeds, wait for the leaves to emerge then grab them fast before the whole lot bolted to flower then to seed. Not only is gone-to-seed coriander tough, but it produces very few leaves.
