This week, Good Food's Jill Dupleix and Terry Durack named the "17 Australian dishes you must try before you die".
To try the full list you'll have to traipse across the country, from the salted red kangaroo and bunya bunya at Attica in Melbourne to the wood-roasted pigeon at Franklin in Hobart and the apple truffle strudel at Esquire in Brisbane.
But for one, you needn't go further than New Acton, with Monster Kitchen and Bar's yabby jaffle making the cut.
To look at, it's merely a humble toasty. But the mixture of yabbies, horseradish, creme fraiche, chives, lemon juice, gruyere and buttered bread make it a hot, crisp winner.
The sanger, which has a bit of a cult following, will set you back $20 and is available from midday until 1am.
