Brisbane is set to get an over-water champagne and oyster bar but the developer is remaining tight-lipped about who the operator will be.

The bar is to be built as part of the $110 million Howard Smith Wharves project, with the development application for the bar submitted in December 2017 and approved in April 2018.
On Tuesday it was revealed the construction of the over-water bar was now under way, but Howard Smith Wharves development director Luke Smith would not give away any more detail.
Mr Smith confirmed the operator had been selected, and was a known operator, but would not elaborate further.
“We really look forward to making some announcements shortly,” he said.
The Howard Smith Wharves development included the restoration of several heritage buildings, which would be transformed into restaurant and function spaces.
The restoration of these buildings is now complete and the spaces are ready for fit-out.
A Greek restaurant run by Jonathon Barthelmess, a Japanese restaurant and bar called Toko and a 180-seat Asian eatery called Stanley Restaurant will tenant the spaces*.
The council’s infrastructure chairwoman Amanda Cooper said with the restoration complete the construction of the over-water champagne and oyster bar was one of the final stages of the project.
“It will feature a river lounge so you will be able to enjoy the river and sit there and certainly enjoy the spectacular views along the reaches of the river,” she said.
“It will also feature a champagne lounge and an oyster bar.”
To construct the octagonally shaped bar, eight over-water piles and two land-based piles will be constructed.
Howard Smith Wharves is on track to open in late 2018.

* Stanley Restaurant was previously reported as having a capacity of 18. The restaurant has a capacity of 180.
