In a statement, NSW Police said a Toyota Camry crashed into trees about 10 kilometres north of Bywong just before 3.30pm.
Police said they had been told passing drivers assisted the sole occupant - a 29-year-old man - before he stole a black Toyota Aurion belonging to one of the other drivers and drove away.
Officers from the NSW Police Traffic and Highway Patrol Command spotted the car on the Federal Highway at Wollogorang a short time later.
After a short pursuit, the Toyota Aurion was stopped about 4.45pm.
The man has been arrested and taken to Goulburn Police Station.
