Historic Fortitude Valley building to be transformed into brewery

The brewery’s Brisbane location will be within the brick building on Bridge Street, adjacent to rail lines, which heritage documents show dates back to 1936.

The small brewery would be used for brewing a rotating range of beers, which could be consumed on site in the tasting room.

It would also incorporate an event space and offices and storage for Brisbane staff.

Stone & Wood managing director Ben Summons said the company had wanted a place close to the city centre and began searching over the past few months.

“We always thought at some stage it would be logical to have a foot on the ground in other locations,” he said.

“This location we landed was the first one to tick all the boxes.

“It’s not a pub. Think about bringing the Byron Bay tasting room to Brisbane.”

Mr Summons said he had not specifically sought out a heritage building, but it was listed on the Brisbane City Council heritage register.

“When we first went there we saw it was a great look and feel from the outside and inside it has nice vibes, high ceiling, exposed brick, exposed steel beams,” he said.

“It’s going to be a pretty busy several months to bring it to life.”

Mr Summons said the next step was submitted a development application to the council for assessment.

The brewery, which could brew 600 litres at a time, was planned to open in the first half of 2019.
