Around 10.10am on Thursday, detectives executed a search warrant at Courgette restaurant on Marcus Clarke Street, Civic.
A short time later, they also executed a warrant at a private residence in Bilin Bilin Street, Bonner.
At the Civic warrant, detectives began a systematic search of the premises, including the main restaurant and the kitchen.
Two teams of forensic crime scene investigators were then called in to make their assessments and remove any physical evidence.
The nature of the investigation is as yet unconfirmed, but is understood to be in relation to alleged drug trafficking and money laundering.
About 35 minutes after the Bonner arrest, the man was brought into City Police Station by two officers.
He is expected to face the ACT Magistrates Court on Friday morning along with a second man, who is understood to be in custody in relation to the same matter.
Another warrant was executed in Bardsley Place, Holt, as part of the investigation.
