An Evening with the Sommelier and the Chef at QT Canberra on June 17 offers just that: a five-course interactive dinner that showcases some of the region's best produce and wines.
QT Hotels group wine director Chris Morrison and Capitol Bar and Grill executive chef Josh Smith-Thirkell will lead the evening, with discussions on the menu and the wine matchings. Each course is matched with a local wine as well as an international wine.
Start with some Moonlight Flat Oysters and a 2019 Helm Classic riesling and a 2018 Pierre Luneau-Papin Muscadet Sevre et Maine Sur Lie, from the Loire Valley France.
The gnocchi entree features Murrumbateman's Majestic Mushrooms and truffles from The Truffle Farm, paired with a Ravensworth nebbiolo and an Italian nebbiolo.
Boxgum Grazing provides the lamb for main, matched with a Mount Majura tempranillo and a Spanish tempranillo from Palacios Remondo.
Try a Clonakilla 2019 shiraz viognier with some Tilba vintage cheddar, alongside a syrah viognier from France.
And finish with apple pie and burrata, courtesy of Tanbella Orchard at Pialligo paired with a Win's Creek Mead.
Morrison has spent almost 25 years working in the hospitality and wine industries. He was awarded The Sydney Morning Herald, Good Food Guide Sommelier of the Year, while leading the wine team of the three-hatted Guillaume at Bennelong restaurant in 2006. With a wealth of experience, Morrison has represented Australian wine around the world as a communicator, and educator for Jacob's Creek wines as the global spokesperson, and was awarded a scholarship at the prestigious Len Evans tutorial held annually in the Hunter Valley.
Smith-Thirkell won the Chef of the Year at the 2021 AHA ACT Hospitality and Tourism Awards and has led Capitol Bar and Grill to become one of Canberra's destination dining spots.
