The event is named for the noodles, but it's a sweeter treat that has been winning over visitors at the Enlighten Night Noodle Markets.
Sydney's Gelato Messina has been serving up dessert creations at the event, which finishes on March 11, with the clear favourite their Aunty Tomsu's Cheesecake Sundae.
Messina's Sian Bishop said they've sold more than 3500 of the sundaes from their colourful, Japanese game show-themed stand.
The dessert combines Japanese cheesecake, strawberry and cherry blossom cream, strawberry meringue, strawberries and strawberry gelato.
The name is a cheeky nod to popular Japanese bakery Uncle Tetsu's Japanese Cheesecake, and Ms Bishop said the sweet creation actually had a bit of Canberran history to it.
"When we're designing the menu, our head chef Donato Toce and executive chef Tom Mitchell test out lots of items. This one was named as a homage to Tom, we just tweaked the name for a bit of humour," she said.
"[Tom's] actually originally from Canberra so maybe that's why it's selling so well there - the Canberrans have a sixth sense."
This is the second year at the Enlighten Night Noodle Markets for Messina - it's the fourth year for the markets in general.
"We have been doing Sydney and Melbourne for longer but last year was our first visit to Canberra. It was so popular we couldn't not go back," she said.
Sitting right in the heart of the Enlighten Festival, the Noodle Markets opened on March 2, and run for 10 nights at Reconciliation Place.
The open-air markets this year have 21 food stalls blending eastern and western flavours, serving up everything from a deep-fried gelato katsu sandwich, to noodles, dumplings, curries and even a burger named the ACT ('Asian chicken tonkatsu' burger).
More than 43,000 people attended the event over the opening weekend, with crowds expected to continue over the final two evenings.
The markets are open from 4pm on the weekend, and run until midnight Saturday and 9pm Sunday.
The event is all ages, free entry, and completely cash-free, with EFTPOS available at all stalls.
