Launching on October 8, Krakatoa will be running inside Kokomo's tropical dining room for a limited time only.
Michael and Peter Harrington have spent six weeks fine-tuning the venture, and the fitout across two floors has been done by Capezio and Copeland.
The Harringtons saw a need to pivot their business in this "new normal".
"We have decided to temporarily shift our focus from the nightlife scene to dining, so we can utilise our space more efficiently and offer locals a menu that is innovative and celebrates the reopening of the hospitality industry," Michael said.
The duo have been recognised for their rapid response to at-home dining with free delivery to as far as Goulburn. Krakatoa further conveys how they are open-minded to shifting their business to best satisfy Canberrans' hunger for unique culinary experiences.
"We want to bring the same atmosphere and energy that locals know and love us for into this new menu at a time where it has been harder to do so," Peter said.
The flavour profile is south-east Asian, think Malaysia, Indonesia, Vietnam and Thailand, with a focus on the barbecue under the watchful eye of executive chef Johnon MacDonald and head chef Straun Preston.
There'll be an eight-course set menu for $80 per person, with "omnivore" and "vegan" menus to choose from.
Think kurabuta pork belly with prawn and peanut brittle sambal; charcoal roasted rainbow trout with young coconut and avocado salad; or a wood-fired duck curry, with lychee and chicken fat rice.
There's also matching tiki cocktails for $30.
The menu proudly features fresh seafood and meats with smokey flavours, punchy chilli and raw tropical fruits and vegetables.
MacDonald says the menu proudly features fresh seafood and meats with smokey flavours, punchy chili and raw tropical fruits and vegetables.
"While we have included some classic flavours that our diners are familiar with, we have reinterpreted them in a way that is completely new for us and shares our passion for innovative dining," he said.
